Toyama has a really cool vibe to it and it's interestingly larger that it looks on the outside. Optical illusion, I suppose. Perhaps it's not so much the spacing, but the height of the roof which gives it a distinct feel. Came here in a group of 4 during happy hour and ordered their sushis. We got a lot of unagi, shrimp and some tuna sushis. I noticed the portions were not consistent. My friend's sushi has a large piece of tuna, for instance, but mine has the thinnest layer. lol. For the rolls, we got the tiger eye and spicy tuna, they were fine but nothing out of the ordinary. In fact, I would say they were kind of tasteless in many ways even with the soy sauce and wasabi. Not really interesting.

I've got to say, though, that Toyama has THE NICEST MANAGER I've ever met in an Asian restaurant. We didn't know who our waiter was, the manager sees this, and quickly made it happen. He personally saw that we got our food on time and in a prompt manner. He made good conversation with us, asked if we needed anything, and really seemed to care that things went well. I have to say the bad grade I'm giving to Toyama has nothing to do with him. The manager was the lone bright spot in Toyama that stood out. So kudos to him.

We continued to order some more things, including the tempura. I hate to say it, but they don't seem to know how to make adequate tempura here. It gets a very low grade from me. They really over-fried it and it tasted like burned shrimp. There was a bitterness to it that no amount of the sauce could take away. We were glad we got in for happy hour, so we didn't feel very bitter (no pun intended) about it. It was worth mentioning though, that along with the sushi, nothing besides the nice manager really impressed me.

My opinion of Toyama? Being close to Zake and Aka, not to mention Kata Robata, they're going to have to do much better than being a third-rate imitator. It seems like they're still in the dark with even basic things like what sauces to use on their tempura or how they could make their udon more smoother, and with more flavorful broth. Even the miso soup is a bit amateur. Their promotional situation needs some work as well. They seem to be a business that needs to live off that happy hour/bar scene. However, they're holding on to the disguise of being traditional too tightly. Otherwise, as it stands, Toyama is a Japanese restaurant without an identity.
